Baking: Apple Crumble Cupcakes

Here I will be showing you how to make Zoe Sugg's (@zoella), one of my favorite YouTubers, delicious Apple Crumble Cupcakes. These cupcakes were an absolute hit at my family's Thanksgiving dinner! Servings:

Makes 12 cupcakes

Ingredients:

Cupcakes:

  • 2 eggs

  • 1 cup plain flour

  • 2/3 cups sugar

  • 1/2 cup unsalted butter at room temperature

  • 2 tsps baking powder

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • apples

Crumble:

  • 1/3 cup golden caster sugar or extra fine sugar

  • 1/3 cup salted chilled butter

  • 1/2 cup self-raising flour

  • 1 tsp vanilla extract

  • 1/4 tsp ground cinnamon

Icing:

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/2 cup soft brown sugar

  • 1 cup unsalted butter at room temperature

  • 1 and 3/4 cups icing sugar or powdered sugar

  • 2 tbsp whole milk

Prep:

Preheat oven to 350Β°F

For the cupcakes:

  1. Start by making the apple mixture. Peel, core, and then chop the apples into little squares.

  2. Place the apples in a large saucepan with enough water to cover them and simmer for 5-7 minutes until soft, and then leave until cool.

  3. Cream together the butter and caster sugar until light and fluffy.

  4. Add the eggs, then vanilla extract until combined.

  5. Add the flour, baking powder, cinnamon, and salt and gently mix until combined.

  6. Carefully fold in the apple mix.

  7. Spoon the mixture into a lined cupcake tin.

  8. Bake for 15-20 minutes until golden brown.

For the crumble topping:

  1. In a large bowl, mix together, with your hands, the butter, flour, cinnamon, and vanilla until nice and crumbly, and then stir in the sugar.

  2. Spread the crumble mix onto a lined baking tray and bake for 5-10 minutes until just golden.

For the icing:

  1. Beat together the butter and brown sugar with the cinnamon and vanilla extract, for 5-7 minutes until fully combined and light and fluffy.

  2. Add the icing/powdered sugar a little bit at a time and continue to beat on a low speed.

  3. Add the milk, a tablespoon at a time, until the icing is light and creamy but stiff enough to hold its shape.

Now it's time to build your cupcakes!

  1. Once the cupcakes and crumble have fully cooled, spoon the icing into a piping bag fitted with a star nozzle.

  2. Spread a small amount of icing on the top of each cupcake, and then add the crumble mixture on top.

  3. Using the piping bag, pipe a small swirl of icing onto the top of the crumble on each cupcake. Top it with a small sprinkle of crumble (and maybe some cinnamon), and enjoy!
